MOM’S CHOCOLATE FUDGE

Fuuuuuuuuuudge!!! Always delicious!!!!

Yield: about 30 mini fudge squares
Prep Time: 15 minutes
Cook Time: 60 minutes
Total Time: 75 minutes

Ingredients:

  •  2 tablespoon margarine
  •  1 – 14 ounce can condensed sweetened milk
  •  18 ounces semi sweet chocolate chips
  •  2 cups mini marshmallows
  •  1 ½ teaspoon vanilla

Directions:

  1.  Melt chocolate and margarine with milk over low heat.
  2.  Remove pan from heat.
  3.  Fold in marshmallows and vanilla.
  4.  Spread evenly into wax paper lined 8 x 9 pan.
  5.  Chill 2 hours. Store covered in refrigerator.

KATHY’S BEEF STROGANOFF

Another family favorite is my Aunt Kathy’s Beef Stroganoff! It’s rich and creamy, easy to make, and makes phenomenal comfort food. Enjoy!!

Stroganoff

Serves: 6
Prep Time: 10 minutes
Cook Time: 2 hours
Total Time: 2 hours 10 minutes

Ingredients:
  • 2 cans Campbell’s Cream of Mushroom Soup
  • 1 package Lipton Onion Soup and Dip Mix
  • 1 – 7.3 oz jar of sliced mushrooms, drained (or drained whole mushrooms, chopped)
  • 1.5 lbs. top sirloin steak cut into bite size pieces (uncooked)
  • 6 ozs egg noodles
  • 2 tablespoons butter salt, to taste 6 ozs sour cream
Directions:
  1. Preheat oven to 325° F.
  2. Combine the mushroom soup, onion mix, mushrooms and steak.
  3. Bake for 2 hours.
  4. When you have about 10 minutes left on the timer, cook the egg noodles.
  5. Add the butter and salt to the egg noodles and toss to coat (this prevents sticking).
  6. Remove the Stroganoff from the oven and add the sour cream. Stir.
  7. Serve over egg noodles.
  8. Enjoy!!

MOM’S BLACKENED BARBECUE CHICKEN DRUMSTICKS

This is one of those staple recipes that my family makes all of the time. It’s easy, delicious, and doesn’t take lot of prep or hands-on cook time. Enjoy!!

BBQ_Chicken

Serves: 7 (2 legs each)
Prep Time: 2 minutes
Cook Time: 6 hours (in crockpot), 10 minutes (on the BBQ)
Total Time: 6 hours 12 minutes

Ingredients:

  • 1-2.5 lb. package of Chicken Drumsticks (about 14 legs)
  • 2 jars of your favorite BBQ sauce; mix 2 or more for some extra flavor (my favorites are Bull’s-Eye Original, Sweet Baby Ray’s Original, and Trader Joe’s Bold & Smoky Kansas City Style BBQ sauce)

Directions:

  1. Place chicken and 1 jar of BBQ sauce in the crockpot.
  2. Cook on low setting for 6 hours.
  3. Preheat BBQ, to medium high heat, for 5 minutes.
  4. In the meantime, place the chicken on a foil-covered cookie sheet (the chicken gets really tender and will break apart easily, so be careful when removing it from the crockpot; I use a good pair of tongs).
  5. Carefully place the chicken legs on the BBQ grill.
  6. Baste the chicken with additional BBQ sauce.
  7. BBQ the chicken, with the top closed, for approximately 5 minutes, or until you see a blackened color (my family really loves their chicken about 30-50% black; it gives the legs a ton of smoky flavor!).
  8. Carefully flip the chicken over using tongs and a spatula. While holding the chicken with the tongs, scrape underneath the leg and lift (this will help keep the chicken legs from falling off the bone).
  9. Baste chicken with BBQ sauce.
  10. BBQ chicken for an additional 5 minutes.
  11. Serve and enjoy!!

DAD’S “SPECIAL” MEATLOAF

While I was growing up, whenever my dad was in charge of dinner, it was either fast food or meatloaf. With enthusiasm and a twinkle in his eye, he would say, “Guess what’s for dinner?!! We’re having Dad’s Speeeecial Meatloaf!” His excitement had me thinking there really was something magical about it, so I’d ask him, “What makes it so special?” Most of the time I wouldn’t get an answer, but sometimes he’d say “That’s my little secret.” Such a great memory!! Still puts a smile on my face!🙂 And it turns out that what was special about it, was it was one of the very few meals he knew how to cook, LOL!

This is the best meatloaf I have ever tried! Thank you, dad, for the inspiration!! My dad used to top his with ketchup, and he would add olives. So if you are also an olive lover, add them! I’m not, so I left them out. To perk up my meatloaf recipe, I found a couple of sauce ideas, and tweaked them to my liking. The sauce below adds a sweet tanginess that makes meatloaf taste amazing! Enjoy!

Serves: 4-5
Prep Time: 15 minutes
Cook Time: 60 minutes
Total Time: 75 minutes

Ingredients:
  • 
1 slice wheat bread
  • 1 cup milk
  • 
1 1/2 pounds ground beef
  • 1 egg
  • 1/4 medium onion, finely chopped
  • 
2-3 cloves minced/crushed garlic
  • salt and pepper to taste
Sauce:
  • 1/2 cup ketchup
  • 3 tablespoons mustard (or 3 tablespoons apple cider vinegar)
  • 3 tablespoons brown sugar
Directions:
  1. Preheat the oven to 350°F.
  2. Soak the bread in the milk for 30 seconds.
  3. Combine first seven ingredients and mix well.
  4. Place into a loaf baking dish.
  5. In a separate bowl, combine sauce ingredients and mix well.
  6. Cover the top and sides of the meatloaf with 1/2 of the sauce (keep the other 1/2 for later).
  7. Bake at 350°F for 30 minutes.
  8. Remove the meatloaf from the oven. Carefully tip the pan and drain out excess liquid and fat. Top the meatloaf with remaining sauce, and place back into the oven.
  9. Cook for another 30 to 45 minutes, or until cooked through (make sure to leave the meat slightly pink in the middle, so it stays nice and tender).
  10. After baking, let cool for a few minutes, and carefully drain out excess liquid again.
  11. Serve and enjoy!

MOM’S MANICOTTI

Out of my mother’s recipes, this is both of my brother’s favorite recipe!! Enjoy!

Serves: 6-8
Prep Time: 30 minutes
Cook Time: 65 minutes
Total Time: 95 minutes

Ingredients:

  • 1 package (8 oz.) Manicotti
  • 1 container (15 oz.) ricotta cheese (Mom frequently uses less-10 oz.-ish)
  • 4 cups (16 oz.) shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tablespoon chopped parsley (Mom uses dried parsley)
  • 4 cups (32 oz.) spaghetti sauce (Mom usually buys 2 kinds of spaghetti sauce!!!)

Directions:

  1. Mix ricotta cheese, 3 cups mozzarella cheese, 1/2 cup Parmesan cheese, and the egg.
  2. Pour 1/2-3/4 of one jar of spaghetti sause in 13×9 inch glass baking pan.
  3. Spoon cheese/egg mixture into manicotti shells.
  4. Place filled manicotti shells in pre-saused pan.
  5. If have extra ricotta cheese mixture, place inbetween Manicotti shells filled with mixture.
  6. Pour remaining spaghetti sauce over manicotti shells.
  7. Bake at 350 degrees F for 60 minutes, covered, or until pasta can be penatrated easily with a fork/knife.
  8. Sprinkle with remaining mozzarella cheese and bake uncovered for 2-5 more minutes or until remaining cheese melts.
  9. Serve with garlic bread & Cesar salad, yum!!!! (that’s mama’s comment!🙂.

MOM’S LEMON TILAPIA (OR SWAI)

Such a great recipe!! It’s quick, easy and has tons of flavor… It also makes a really healthy meal, when paired with some veggies!!!

Serves: 4
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients:

  • 3 medium lemons
  • 4 sprigs of finely chopped parsley or 1 tablespoon dried parsley
  • 1 lb. tilapia or swai (four fillets)
  • 2 tablespoons flour
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • Ken’s Steak House Thousand Island dressing (or your favorite Thousand Island dressing)

Directions:

  1. Zest lemon peel with fine grater.
  2. Juice lemons and discard seeds. If using dried parsley, add it to the lemon juice. Set aside.
  3. Rinse fish fillets under cold water. Dab dry slightly with a paper towel.
  4. Sprinkle fish with flour, lemon zest, salt, and pepper.
  5. Heat olive oil in a sauté pan on medium high heat.
  6. Brown fish until done, flipping half way through (about 10 minutes total).
  7. Add lemon juice and parsley.
  8. Shake the pan to mix final ingredients and coat the fish.
  9. Serve with Thousand Island dressing, for dipping, and enjoy!!

MOM’S KNOCK YOUR SOCKS OFF CHILI

This is delicious, easy and healthy (just take it easy with the cheese and sour cream). Enjoy!!! 

Serves: 10-15
Prep Time: 0-10 minutes
Cook Time: 15-20 minutes
Total Time: 15-30 minutes

Ingredients:

  • 1 package Jennie-O Ground Turkey Lean (7%), 20 oz (1.25 lbs.)
  • 1 can Great Value Chili Beans (15.5 oz [439g])
  • 1 can Bush’s Chili Beans (Pinto Beans in Chili Sauce), 16 oz (454 g)
  • 1 can Great Value Dark Red Kidney Beans, 15.5 oz (439g)
  • 1 can Great Value Diced Tomatoes in tomato juice, 14.5 oz (411g)
  • 1 packet McCormick Original Chili Seasoning Mix, 1.25 oz (35g)

Optional Toppings:

  • Grated cheddar cheese
  • Chopped onion
  • Avocado
  • Sour cream

Directions:

  1. Cook turkey burger in large soup pan.
  2. Add all other ingredients into the soup pan.
  3. Simmer for 5-10 minutes.
  4. Serve and enjoy!!

GRANDMA NAOMI CAMERON’S CREAM CORN

This recipe is also a family favorite!! My mom makes it for EVERY special occasion!! My brothers can eat an entire bowl of it, along side their Thanksgiving or Christmas dinner. It’s yummmmmy!

Serves: 10-15
Prep Time: 10 minutes
Cook Time: 12-15 minutes
Total Time: 22-25 minutes

Ingredients:

  • 2 packages (20 ounce) rinsed frozen corn
  • ½ pint (8 ounce) whipping cream
  • ½ pint (8 ounce) whole milk
  • 1 teaspoon salt
  • ¼ teaspoon accent or MSG (optional-Mom Sandy never uses this)
  • Pinch white pepper
  • 6 teaspoons sugar
  • 2 tablespoons melted butter
  • 2 tablespoons flour

Directions:

  1. Bring top seven ingredients to a boil and simmer for 5 minutes.
  2. Melt the butter.
  3. Blend the melted butter with the flour.
  4. Add the butter-flour mix to the corn.
  5. Remove from heat.
  6. Enjoy!

MOM’S CHICKEN & RICE BAKE

Easy and delicious, this was a family favorite growing up! Great dish for kids and adults!

Serves: 4
Prep Time: 5 minutes
Cook Time: 45-75 minutes
Total Time: 50-80 minutes

Ingredients:

  • Non-stick cooking spray
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • ¾ cup milk
  • ¾ cup minute rice
  • 4 pieces of chicken
  • Lipton’s onion soup mix

Directions:

  1. Preheat oven to 325 degrees F
  2. Spray glass dish with non-stick cooking spray
  3. Combine soups and milk in a separate bowl
  4. Place rice at the bottom of the glass dish
  5. Top with soup mixture
  6. Top with chicken
  7. Top w/ Liptons mix
  8. Cook bone-in chicken for 1 hr. 15 mins. or boneless chicken breast for 45 mins. (or until juices run clear)
  9. Half way thru cooking, mix the rice
  10. Let cool for a few minutes and serve
